POPEYE’S  FAVORITE SPINACH DISHES

     Everybody’s favorite cartoon sailor gets his strength from an old vegetable favorite – SPINACH. Originating in Persia, traders brought spinach leaves to Europe in the 12th century. Italians embraced the vegetable and used it in a delicious cream sauce called Florentine. Besides being delicious, SPINACH lives up to its reputation as a power food being rich in iron, folic acid, Vitamins A, B2 and C and is the best source of Vitamin K of any green vegetable.  Staci prepares for you to taste (recipes in the HANDOUTS): PARMESAN  CHICKEN  in  CREAMED WINTER GREENS (including SPINACH) with TOASTED CHICKPEAS; SPAGHETTI with SPINACH & AVOCADO SAUCE and SPINACH & BEEF SALAD with CRANBERRY VINAIGRETTE. We’ll add snacks to enjoy before and during the Program, coffee, herbal teas, ice water and raffle prizes. How do we know these are Popeye’s favorite Spinach dishes? He told us of course!
