SOUPS: A MEAL IN A BOWL

     SOUP is one of Man’s oldest “recipes” – adding ingredients to make a dish. January is National Soup Month and Staci has NEW! recipes that are perfect for a cold, winter night. These soups also freeze well. Make a double batch and freeze the leftovers. These soups are also a great base for using leftovers. Make a soup and add leftover chicken, pork, beef or even hot dogs and sausages. Staci prepares for you to taste (recipes and more in HANDOUTS): RATATOUILLE (originated in Nice, France -vegetables and spices) topped with GREMOLATA (Italian mix of lemon zest, parsley, garlic and anchovies used as a garnish or a rub or filling like in ossobuco); POBLANO CORN CHOWDER w/FRESH PICO de GALLO (Mexican salsa used as a topping or a base with ingredients added like shrimp, crab, etc.) and VEGETARIAN VEGETABLE SOUP w/Herbed HUMMUS and PITA (it’s ok to make it non-vegetarian by adding chicken, beef, sausages, etc.). We’ll add coffee, herbal teas, ice water, snacks to enjoy before and after the program and raffle prizes.
